An adult izakaya where you can enjoy Japanese wine from various regions across Japan has opened in Shin-Nihonbashi!
Conveniently located just a 3-to-4-minute walk from JR Kanda Station, Shin-Nihonbashi Station, and Subway Mitsukoshimae Station, "Tosa Myojin".

True to its name, this is a restaurant where you can enjoy an abundance of ingredients from Kochi Prefecture.
Along with their specialty bonito, there is a wealth of Kochi ingredients and sake, including buntan, Shimanto eel, Tosa Jiro chicken, and Shimanto pork!
And all the wines here are carefully selected Japanese wine! You can always enjoy around 20 items from various regions.

Let us show you what kind of place it is in more detail.

CHAPTER 01

Exquisite! Straw-seared bonito salt tataki packed with umami

The dish that the owner definitely wants you to try first is the "straw-seared bonito salt tataki."
That's because this is renowned as Japan's No. 1 in bonito fishing, Myojin Suisan, which operates this restaurant.
Artisans carefully straw-sear pole-and-line caught bonito right in the restaurant (with a commitment to using straw and Binchotan charcoal both from Kochi Prefecture!), serving it freshly seared.
Seared all at once over a straw flame exceeding 500 degrees Celsius, the bonito locks in its flavor and is enjoyed simply with salt. The thick slice that lets you enjoy its meaty texture is another key point.
"Being in the fisheries industry, we are naturally confident in the freshness of our bonito!" they share.

CHAPTER 02

Including wines you can only drink here! Introducing Japanese wine

Now, let's take a look at the featured Japanese wines.
Since we are in Tosa, Inoue Winery (Kochi) offers three varieties! Among them, "tosa cavatina Yamakita Albariño 2023" is a rare bottle that won Platinum at the Washu Award held in Hong Kong in 2024.
Enjoying a regional pairing alongside freshly seared bonito tataki and local Tosa ingredients is a sophisticated luxury.

If you want a single bottle to carry through the entire meal, choosing a rosé is a great option. Speaking of rosé, Hirakawa Winery (Hokkaido)'s "Rose des Vents Terre de Yoichi 2022" was available!
Winemaker Atsuo Hirakawa, a former sommelier, is above all dedicated to "crafting wines that pursue the enjoyment of fine cuisine as food-friendly wines." Because of this, hisMany of the places where people encounter wine are gourmet establishments, particularly grand maisons. Being able to enjoy wine in a Japanese restaurant with such a relaxed atmosphere is a delight.

For those who feel, "Since I'm here, I want to try a wine you can only drink here!", let us introduce two wines with rare opportunities to encounter.
For red wine, how about Domaine Kosei (Nagano)'s "Shiojiri Kataoka Merlot Barrel Aged 2020"?
"Domaine Kosei" is a winery founded by Mr. Kosei Ajimura, who served for many years as chief winemaker at Chateau Mercian Katsunuma Winery, that grows exclusively Merlot and crafts exclusively Merlot. This bottle is sure to satisfy anyone who wants to drink a delicious Merlot.
This is a one-barrel limited wine purchased en primeur by CruX Co., Ltd.

And for white wine, how about Vignoble Vineyard (Hiroshima)'s "Project933 Sauvignon Blanc & Semillion 2023".
This wine is a collaboration between Asia's No. 1 sommelier, Mr. Reeze Choi, and Mr. Takashi Yokomachi of Vignoble Vineyard, who produced the world's best Sauvignon Blanc (winning the Gold award with the top score of 95 points for the 2021VT at the IWSC).A collaboration wine created by the two of them .
Mr. Choi traveled from Hong Kong to a winery in Miyoshi City, Hiroshima Prefecture multiple times, living on-site to make and finish the wine. Because it was primarily sold in the Asian market centered around Hong Kong,it is a rare wine with only 120 bottles in existence in Japan.

CHAPTER 03

You can also enjoy Kochi sake!

Kochi is one of Japan's great sake-producing regions, so they naturally offer a wide selection of sake as well.
If you find yourself unsure of which one to choose from the many options, the manager, who is knowledgeable about sake, will give you recommendations.
Why not take your time enjoying it with your choice of an ochoko sake cup?

You will also surely want to try Tosa craft beer and freshly squeezed buntan pomelo juice.

CHAPTER 04

In Closing

Since its opening in March of this year, it has become a hot topic among sake lovers as well as Japanese wine enthusiasts.
Course meals start from a casual 5,500 yen (tax included). This course features 10 dishes—including the house specialty, straw-seared bonito tataki served half with salt and half with sauce, Shimanto chestnut pork steamed in a bamboo basket, fried dishes, grilled items, and finishes with seasonal rice cooked in a clay pot and dessert!! It offers a thoroughly satisfying experience. (Course prices and contents are from the time of coverage in March 2025. Please check with the restaurant for details.)

You can sit at the counter to watch the artisans handle the straw-searing and knife work, or enjoy your meal at table seating, which is convenient for business entertainment or dinner parties.
It is a place where the description "an izakaya for adults" fits perfectly.
Why not enjoy delicious ingredients from Kochi alongside your choice of sake or Japanese wine?
