Commitment to Wines Without Added Antioxidants

Wine is, by nature, a drink that reflects the growing conditions of its vintage as well as the local climate and terroir.

Yahagi Wine begins its work with the soil itself.

Its wines made without added antioxidants are different from the start: the raw materials are different, the filtration is different, and the winemaking process is different. There is close attention to every single grape.

The goal is not simply to omit antioxidants, but to make wines filled with the energy of nature from fruit grown in land blessed with a rich natural environment.

Commitment to the Environment

Ichinomiya is home to one of Japan's leading alluvial fans.

It lies at the upper edge of a landscape surrounded by mountains on all sides around the Kofu Basin.

The winery believes that protecting this natural environment and avoiding pollution is a responsibility of the people who live here.

In the food chain, there is no separation between animals and plants.

By building the soil and observing it closely, wine itself comes into view as one part of that chain.

For Yahagi Wine, the first priority is the soil.

Commitment to the Vineyard

The vineyard covers approximately two hectares.

No herbicides are used, and no chemical fertilizers are applied.

Grape pomace and seeds are mixed into organic fertilizer, creating a vineyard managed with natural inputs.

A typical vineyard may harvest two to three tons of grapes from roughly 1,000 square meters, while Yahagi Wine harvests around one ton from the same area.

Even so, the winery is grateful simply to receive the grapes that nature allows it to harvest.

That is viewed as humankind's share of what nature provides.
