Viticultural Management
Our vineyard management is centered on concepts of plant physiology related to grapevine growth, including photosynthesis, plant hormones, sap flow, and maintaining the balance between root zone and leaf area. From a scientific perspective, we also conduct detailed soil analysis and use the results to manage soils and fertilization, while practicing sod culture without tilling the soil. Based on the belief that “if truly high-quality grapes can be grown, winemaking itself can be simple and straightforward,” our winemakers regularly work in the vineyard and participate in cultivation management together with the vineyard team. Especially around harvest, we carefully analyze fruit composition and place the highest priority on picking the grapes at optimum ripeness.
