About "Shida Grand Souki 2019"
"Shida Grand Souki 2019" is a special sparkling wine that represents the pinnacle of Naka-Izu Winery Hills.
Made from 100% "Chardonnay" and "Shinano Riesling" from its own Naka-Izu Shida Farm, it was fermented in tanks and aged in oak barrels for 4 months.
"Secondary fermentation in the bottle" was carried out over a period of 3 years.
After that, undergoing "remuage (riddling)" and "dégorgement (disgorgement)", it was finished dry as "non-dosé" without adding sugar-containing liqueur, and then completed with an additional bottle aging of about 1 year and 5 months—a truly special bottle.
The Taste of "Shida Grand Souki 2019"
When poured into a glass, "Shida Grand Souki 2019" displays the fine bubbles characteristic of this wine rising to the surface.
On the top note, rich aromas of apple compote and apricot can be perceived, followed by discreet Japanese citrus, along with mature, complex aromas.
On the palate, soft bubbles emerge alongside a brisk, pleasant acidity.
While dry and crisp, it is a wine where you can enjoy the lingering umami brought about by maturation for a long time.
