相澤ワイナリー (Aizawa Winery)

It all began with the desire to protect the wild grapes that have grown naturally in Tokachi, Hokkaido since ancient times.

Over many years, we cleared mountainous wilderness to cultivate wild grape varieties in a way that remains as close to nature as possible.

With temperatures exceeding 35°C in summer and dropping to minus 30°C in winter, Tokachi experiences some of the most extreme temperature swings even within Hokkaido. Yet even in such harsh natural conditions, this land's grapes have the strength to survive. That is why neither pesticides nor chemical fertilizers are needed.

Staying true to this belief, we have protected our vines—which root themselves vigorously in the earth—from nature's fury, pests, and birds, through human hands and the help of a diverse ecosystem that includes beneficial insects.

In 2019, "Aizawa winery" was completed, and in 2020, we began selling wines vinified in-house. In addition to wine, we also produce and sell grape juice, grape jam, and grape salt.
