ABOUT
Tokachi has some of Hokkaido’s harshest winters, with temperatures falling to -30°C and summer highs above 35°C. The extreme temperature range has long made it considered unsuitable for grape growing. We find great joy in taking on the challenge of raising grapes in this demanding environment.
Aizawa Farm grows grapes without pesticides or chemical fertilizers—an approach still rare in viticulture. Because the land had not been exposed to agricultural chemicals, forest was cleared and roots removed to build the vineyard from the ground up. Former woodland became vineyard, and carefully raised grapes become juice, jam and wine. The farm does not yet have its own winery, so wine is made under contract while juice and jam are processed on the farm.
