Tokachi, Hokkaido, sees winter temperatures below minus 20°C and relatively little snowfall. Growing grapevines, which are vulnerable to severe cold, is difficult here, and European varieties in particular have long been considered challenging to cultivate.
We asked ourselves: is it really impossible to grow European grape varieties on this land? If we could create the healthiest possible environment for the vines, surely grapes with a character unique to this place could emerge. In 2016, drawing on our experience as crop farmers, we began our challenge of growing grapes from the perspective of “building the soil.”
