Nakaizu Winery Château T.S has released No. 3 in its COLLEKARA series.
The series explores a new winemaking concept, and this release is a white wine made from eight white-wine grape varieties.

About “COLLEKARA Series No. 3 Vineyard No.25 White 2025”
The wine is made only from grapes grown through the challenges taken on by the winery’s viticulture team, which helped inspire this new concept.
Eight white-wine varieties were grown in the estate vineyard known as No. 25, where the team has deliberately experimented with grapes generally considered better suited to cool climates or difficult to cultivate, despite Izu’s warmer conditions.
About the wine
The eight varieties are Chenin Blanc, Gewürztraminer, Pinot Gris, Niagara, Monde Briller, Albariño, Viognier, and Neo Muscat.
No sugar or acid adjustment is used. The wine is pale lemon yellow with relatively high viscosity. At lower temperatures it shows lemon and pear along with a sharp, floral impression reminiscent of ginjo sake aroma.
As the temperature rises, aromas develop toward white stock flowers and tropical fruit such as lychee, banana, and mango.
On the palate, refreshing acidity comes first, followed by gradually emerging sweetness and umami, leaving a distinctive and fairly long finish.
It is designed to pair with a broad range of seafood and can even be poured over shaved ice for an adult dessert.
