Starting Friday, June 9, 2023, the hotel will release "Kyoto Tamba Traditional 2011 Long-Aged -SEN-."

About "Kyoto Tamba Traditional 2011 Long-Aged -SEN-"
"Kyoto Tamba Traditional 2011 Long-Aged -SEN-" is a long-aged sparkling wine with an original taste and design born from a collaboration with "Tamba Wine Co., Ltd." and "Kyoto City University of Arts."
Supervised by Wataru Iwata, the hotel's chef sommelier, this traditional-method sparkling wine, aged in bottle for as long as 10 years at Tamba Wine, was crafted into a gem tailored to an original taste for THE THOUSAND KYOTO.
In addition, the label design, which serves as the face of the wine, was selected through an open call among students of Kyoto City University of Arts.
As a "millennium hotel" pursuing a new comfort that extends 1,000 years into the future, this initiative reportedly aims to convey the appeal of local wineries and, by extension, Japanese wine, while supporting next-generation artists emerging from the local region.
Flavor of "Kyoto Tamba Traditional 2011 Long-Aged -SEN-"
"Kyoto Tamba Traditional 2011 Long-Aged -SEN-" uses 100% grapes from Kyoto Tamba harvested in 2011.
Following 10 years of aging, it was disgorged in August 2022.
Aromas of baked apple, brioche, toast, and honey overlap in layers, while on the palate, bubbles as smooth as mousse lead into a pleasant finish.
It is said to be a bottle perfectly suited to luxurious dishes ranging from salt-grilled fatty kinki rockfish or tilefish to lobster gratin, as well as celebratory dishes such as Christmas chicken and osechi.
It will be sold on the hotel's official online shop and served at restaurants inside the hotel.
