Naka-Izu Winery Completes “Izu Hina — HINA,” a Distilled Spirit Made from Shinano Riesling

Naka-Izu Winery Château T.S has completed “Izu Hina — HINA,” a distilled spirit made from Shinano Riesling, a Japanese hybrid grape harvested in 2024.

It is a first for Naka-Izu Winery.

A Distilled Spirit Made at a Winery

Izu Hina — HINA is a distilled beverage produced at the winery.

Naka-Izu Winery has previously made two distilled spirits using a method inspired by Italian grappa, distilling grape pomace left after winemaking.

The first batch of the new HINA uses Shinano Riesling harvested in 2024 from the winery’s own Naka-Izu vineyard. Under the supervision of a South American mixologist, it was distilled using a method designed to come as close as possible to Peruvian pisco production and was completed in autumn 2025.

Launch Event

Naka-Izu Winery Château T.S will unveil HINA at the first Izu Wine Tasting, held at pisco-focused mixology bar alKmista by PATINASTELLA in Kamiyamacho, Shibuya.

The event will take place Thursday, January 29, 2026, with special guest Taiki Tagawa, winemaker and distiller at Naka-Izu Winery.

The theme is the marriage of fermented and distilled beverages: two drinks born from the same fruit but following different paths.

The exhibition pairings are:

1. Sparkling wine and cocktail: Izu Sparkling Wine Soki × Izu Kagero cocktail
2. Wine and cocktail: Izu Shinano Riesling × Izu Hina cocktail
3. Interlude cocktail: Izu Yama Sauvignon wine cocktail

It is a new challenge from Naka-Izu Winery Château T.S.
