CAVE D’OCCI is a winery well known to fans of Japanese wine.
CAVE D’OCCI BREWING, which makes craft beer through the perspective of winemakers, launched its canned “SOLO Series” on Friday, July 10, 2026.
These are the brewery’s first canned products.
About the “SOLO Series”
The “SOLO Series” focuses on a single hop variety and brings a winemaker’s philosophy into everyday drinking.
While much of today’s craft beer layers multiple hop varieties to compete in aromatic intensity, this series deliberately narrows the recipe to just one type of hop.
Like a solo instrumental performance, it draws out the pure individuality of the ingredient itself and a beauty that leaves no room for disguise.
For example, one beer in the SOLO Series, “Glint,” incorporates a New Zealand Sauvignon Blanc winemaking technique — an approach that reflects the brewery’s roots in wine production.
The beers are made in a distinctly wine-like way, including secondary fermentation in the container, as with sparkling wine.
About the Craft Beers Being Released
The lineup is as follows.
■Glint
Made with Motueka hops.
Drawing on New Zealand Sauvignon Blanc winemaking techniques, fermentation transforms the hops into bright, expressive aromas.
Complex aromas of tropical fruit, passion fruit, lime and mojito-like notes unfold together with juicy fruit character.
■Whisper
Made with Nelson Sauvin hops.
Fruity and aromatic yet finished quite dry, this beer pairs easily with food and also rewards changes in serving temperature.
It offers clove and white-pepper spice along with aromas reminiscent of white wine.
■Linger
Made with Mandarina Bavaria hops.
It expresses the hop’s characteristic mandarin-orange and citrus flavors.
Juicy impressions reminiscent of orange and grapefruit juice spread across the palate with a gentle bitterness, followed by pleasant acidity on the finish.
It is a refreshing beer with a fruity, light drinking style.
These craft beers are packed with a winemaker’s philosophy and are well worth trying for Japanese wine fans too.
