Characteristics of the Wine
The wines are made using low-stress methods designed to preserve as much of the grapes’ natural flavor and delicacy as possible. These include a basket press, which extracts juice by applying pressure from above, and slow transfers based on the siphon principle and gravity. The wine labels feature works by the painter Mikio Ban. The wines are named after animals that visit the vineyard or after titles of the artist’s works.
