Yet by taking advantage of volcanic-ash soil that does not retain water well,
grapes have been grown on terraced fields along the mountain’s southern slopes.
In a land associated with the descent of the heavenly grandson in Japanese mythology, the winery works with crosses between native and European grape varieties and refines its blending techniques to create delicious wines in this demanding climate.
These hybrid varieties contribute significantly to the wines' body and complexity.
