Ushiku Brewery makes both craft beer and wine.
The team cross-utilizes equipment, for example fermenting white wine in beer tanks and storing wine in beer kegs.
For wine, these vessels can have unexpected advantages, such as shapes that make it easier to separate lees and the ability to store wine without exposure to oxygen.
Ushiku is said to have relatively small differences between daytime and nighttime temperatures.
The main varieties are Merlot and Chardonnay, but the winery also grows Petit Verdot, Tannat, Petit Manseng, and others.
It is testing varieties known for retaining freshness and acidity even in comparatively warm regions with limited diurnal temperature variation, searching for grapes that are well suited to Ushiku.
At Ushiku Brewery, around 10 kinds of craft beer are normally available for tasting.
The brewery also offers beer by volume in dedicated tumblers and PET bottles.
Being able to taste many different styles and then choose a favorite to take home and enjoy at leisure is part of the appeal.
