ドメーヌタカヒコ (Domaine Takahiko)

Rather than the world of wines that are rich and have a long finish, I am drawn to the world of wines that, while delicate (pale), possess depth, breadth, and a lingering finish, seeking in wine something akin to the world of high-quality dashi broth.

To envision such a wine in Japan, it is vital that it be Pinot Noir grown in well-draining volcanic soil and a climate with moderate rainfall— and not in a warm region, but in a cool climate...

While I believe there is potential in other varieties as well, I am not dexterous enough to handle many varieties, so I want to dedicate my entire life solely to Pinot Noir and pursue that ideal world.
