—this is "Vinoble Vineyard", a highly acclaimed winery located in Miyoshi City, Hiroshima Prefecture.
Welcoming its grape grower and winemaker, Takashi Yokomachi, a winemaker's dinner pairing Mr. Yokomachi's wines with Chef Hayashi's Italian cuisine will be held at The Momentum by Porsche, an Italian restaurant in Shiodome, Tokyo.

Therefore, for this occasion, they are reportedly being provided specially from Mr. Yokomachi's personal cellar.

This workshop is likely already famous among cheese lovers.
Even if you are not, as it has also won numerous awards at domestic and international competitions and has been featured across media outlets,
many of you may already be familiar with it.
A major feature of the workshop is using milk from cows and goats raised through mountain dairy farming (free-range grazing).
Without consuming grain feed, grazing on the earth's grass, and living freely without being tethered to a barn, the milk from these animals has an exceptionally gentle flavor.
In addition, having won several awards at the recently held Japan Cheese Award and being featured in the media, as well as goat milk production naturally decreasing in autumn, cheese from here has become extremely rare.
Under these circumstances, upon hearing that it would be a pairing with wines from Miyoshi City, they specially prepared portions exclusively for 15 guests.

Executive Chef Yuji Hayashi honed his craft in Piedmont, Northern Italy, and also serves as the head chef of Tanta Roba, a long-established regional Italian restaurant in Koishikawa, Bunkyo Ward.
Chef Hayashi, who excels at regional cuisine, creates dishes that not only taste exquisite but are visually delightful, while luxuriously yet sustainably avoiding waste such as vegetable scraps.
