Chateau Jun, dedicated to wine for 44 years since its founding.
The winery has released a 100% apple cider (= cidre).
Let's take a look at the details.
About the Cidre Brewing Process
This time, Chateau Jun began brewing cidre, which can be incorporated into lifestyles more casually than wine, even by generations unfamiliar with alcohol.
It is made from Aomori Prefecture apples, fermented slowly over about one month in enamel-lined tanks.
In addition, two rackings were carefully carried out to suppress off-flavors while retaining umami.
Furthermore, through meticulous filtration and taking time to dissolve carbon dioxide gas, it has become a fine-textured and creamy cidre.
About "Chateau Jun Cider (Cidre)"
Chateau Jun Cider (Cidre) maintains the winery's cherished concept of "alcohol meant to be paired with food," and just like wine, its sweetness was intentionally kept modest with meal pairings in mind.
It is finished with a sophisticated adult flavor, starting with the refreshing and gorgeous aroma of apples, followed by faint astringency, gentle acidity, and honey-like notes that unfold on the palate.
When paired with dishes that feature charred nuances, such as curry or dolsot bibimbap, the pleasant bitterness of the apples brings out the best in each other.
Furthermore, the 330ml single-serving size features a pull-tab opening, making it ideal for leisure scenes such as camping.
