Nakaizu Winery Château T.S. celebrated its 25th anniversary on January 15, 2025.
To mark the occasion, it is releasing a specially made series called “Limited-Brew Wine.”
These are special, limited-production wines featuring grape varieties that have supported winemaking in Izu since the winery's early days, varieties that have only now reached commercialization after years of research, and new varieties expected to shape the future of Nakaizu. Each wine reflects the passion of both growers and winemakers.
About “Limited-Brew Wine vol.1”
“Limited-Brew Wine vol.1,” released on March 15, comes with an individual serial number.
Named “Yama Sauvignon 2023 Legacy Style,” it is made using traditional techniques including fermentation with native yeast, foot pigeage, and whole-cluster winemaking without destemming or crushing.
Its classic color shows a subtle blend of orange and red tones.
The aroma opens with sweet-and-tart notes reminiscent of plum, shiso, and wild strawberry, followed by the rustic character inherited from wild grapes and a moderate touch of oak.
The palate is gentle and smooth.
Pleasant acidity is beautifully balanced with the grape's sweetness and savory depth, making it highly moreish.
Recommended pairings include game dishes, Chinese cuisine, liver pâté, and truffle pasta.
