About

Grape Republic is a winery devoted to natural winemaking. Its vineyards and winery are located in Nanyo City, Yamagata Prefecture, where hills rise to the north and fertile plains spread to the south. The area has large day-night temperature differences, relatively low humidity and well-drained geology—conditions well suited to grape growing—yet abandoned farmland has become increasingly visible in recent years. By producing high-quality grapes and natural wines here, Grape Republic hopes to attract new farmers and wineries and restore this growing amount of abandoned farmland. In time, it aims to develop collaborations with Nanyo specialties and agritourism, ultimately building a major wine-producing area in which the whole city could be called “GRAPE REPUBLIC.”

Made of 100% Grapes

The only raw material is grapes grown to express the natural conditions of Nanyo City. Nothing considered unnecessary is added. The same philosophy applies in the vineyard: no herbicides, insecticides or other pesticides are used, nor are fertilizers or antioxidants. There is no chaptalization or acid adjustment, and only naturally occurring yeasts are used. Gibberellin treatment, which eliminates seeds, is also avoided because the acids around the seeds are essential to winemaking. Everything is sustained within a healthy ecological cycle. This approach is possible because wine grapes are grown for flavor and sugar concentration rather than appearance or ease of eating.

Winemaking

The winery facility was completed at the end of September 2017. Its defining feature is a set of 17 amphorae—ceramic fermentation vessels imported directly from Spain. After harvest, the grapes are destemmed, crushed by foot and placed in the amphorae. They are then sealed with carbon dioxide to protect them from unwanted microorganisms, allowing fermentation to proceed naturally into wine. Amphora winemaking itself dates back around 8,000 years, but has recently been revived because it is well suited to natural wine production. This is one reason the wines made here are sometimes described as tasting “more like grapes than the grapes themselves.”
