Premium Botrytized Wine

— A rare wine born from naturally occurring noble rot —

In 1993, browning was discovered on Chardonnay grapes whose harvest had been delayed because ripening was unusually slow. Noble rot, normally associated with varieties such as Riesling and Sémillon, had developed on Chardonnay. At the time, botrytized grapes were extremely rare in Japan and little information was available, so the winery began producing noble-rot wine largely through trial and error, from determining harvest timing to choosing a fermentation method. Fermentation proceeded exceptionally slowly and took two years. During winter, heaters were installed in the cellar to maintain a temperature of around 15°C. The result was an exceptionally rare botrytized Chardonnay wine, uncommon even on a global scale.

Vineyard

Shiojiri in Nagano is a place of striking natural beauty, embraced by the Northern Alps, Southern Alps and the Yatsugatake range. Here lies Kikyogahara, a gently spreading highland at 36° north latitude and an elevation of about 700 meters. In this fruit-growing region, now recognized as one of Japan’s leading areas for grapes and wine, stands Hayashi Farm, the producer of Goichi Wine.

The winery makes a wide range of wines from grapes grown in its own vineyards and by approximately 100 contract growers, with particular emphasis on estate-grown Merlot and Chardonnay. Its winemaking, rooted in the natural gifts of the region, has earned high praise not only from wine lovers in Japan but internationally as well.
