Anko Tsubaki opened in July 2016 as the second location of “Cafe Tsubaki” at Kasaderayama Tsubakikan.

In October of the same year, it received a brewing license under Aichi Prefecture’s sole Cabinet Office structural reform special zone,

and began producing its own doburoku and fruit wines as “Tsubaki Shuzo.”

What Is Anko Tsubaki?

At Anko Tsubaki, you can enjoy doburoku and wine from Tsubaki Shuzo, Aichi Prefecture's first brewery established under a special-zone scheme.

The “EN” in ENCORE means “again,” “repeatedly,” “revival,” or “to begin anew.”

“CORE” means the central core. The “anko” in Anko Tsubaki is a play on ENCORE (French “encore,” English “encore”) and anko, the Japanese sweet red-bean paste.

Anko Tsubaki is located in Nisshin City, Aichi Prefecture.

It is a café, a restaurant, a brewery (Tsubaki Shuzo), a bakery making naturally leavened bread, and a gathering place for the local community.

Thinking Back to Ancient Times

Wine is said to have been produced as early as ancient Mesopotamia.

The wild ancestors of grapevines existed long before humankind, and the yeasts that turn grapes into wine also occur naturally. For that reason, wine is often described not as a human invention, but as a discovery. Anko Tsubaki's house wine is made from wild-grape varieties and without added antioxidants. It is served fresh rather than aged. In that sense, it may be quite similar to the handmade wines born in ancient times.

Anko Tsubaki's house wine is made on site using wild-grape varieties and other grapes grown without agricultural chemicals by the owner in vineyards in Nisshin City. No additives such as antioxidants are used. It is a natural, health-conscious style of wine that is quite different from ordinary commercial wines.
