Pairing Burdock Root with Zweigelt! Recommended Recipes Created by Kinuko Oda

When you think of vegetables you crave in autumn, root vegetables come to mind.

In particular, burdock root, which becomes delicious from November through winter, is an essential root vegetable in Japanese cuisine.

Many people might imagine that pairing wine with its rustic flavor, earthy nuances, and subtle bitterness would be difficult.

This time, culinary researcher Kinuko Oda introduces recipes themed around "Wine × Burdock Root."

These are recommended wine pairings that are easy to incorporate into your everyday dining table.

Please enjoy the season when burdock root is at its best, alongside wine.

Zweigelt Is Recommended for Burdock Root

Burdock root is appealing for its deeply nourishing flavor.

It is an addictive root vegetable with a robust texture, an earthy flavor, and a subtle sweetness and bitterness.

The source of burdock's flavor and aroma lies in its polyphenols and saponins, which are said to bring out its distinctive deep flavor, richness, and delicate sweetness.

When choosing a wine to match burdock root's characteristics, the key lies in wines that offer texture and earthiness.

Merlot from Nagano Prefecture is a perfect match for burdock root, but when looking for an accessible wine that can be enjoyed more casually on a daily basis (as Nagano Merlot has recently reached very high quality, with many bottles geared toward special occasions...), Zweigelt (Zweigeltrebe) is highly recommended.

Zweigelt is a black grape variety representative of Austria, but because it favors cool climates and growing conditions, it is widely cultivated in Hokkaido and the Tohoku region in Japan.

Zweigelt is an attractive grape variety featuring not only the berry and cherry aromas typical of red wine, but also a complexity that evokes spicy nuances, earthiness, and herbs.

With its subtle fruit-derived sweetness, abundant acidity, moderate tannins, and firm texture, it shares elements in common with the textural and flavor characteristics of burdock root.

This time, we pair burdock dishes with Hokkaido Zweigelt.

Burdock Dishes and Zweigelt

When pairing burdock root with Zweigelt, dishes that make the most of burdock's aroma and texture are recommended.

Rather than being limited to purely Japanese seasonings, burdock can be adapted into a wide variety of culinary genres precisely because of its distinctive flavor.

This time, Kinuko Oda has created adapted burdock dishes that are easy to incorporate into your everyday dining table.

And with them, we pair Zweigelt.

Juicy Stuffed Bell Peppers with Burdock Root and Enoki Mushrooms

  • Ground beef and pork mix: 200 g
  • Onion: 1/4 (finely chopped)
  • Burdock root: 60 g (coarsely chopped)
  • Flour: As needed
  • Enoki mushrooms: 1/4 pack
  • Red wine: 1 tbsp
  • Miso: 1/2 tbsp
  • Ketchup: 1 tbsp
  • Worcestershire sauce: 1 tbsp
  • Water: 2 tbsp
  • Salt and pepper: As needed

・Instructions

  1. Thoroughly knead the ground meat with salt, coarsely ground black pepper, and the burdock and onion that have been quickly sautéed to release their aromas.
  2. Lightly dust the seeded, halved bell peppers with flour, mound the meat mixture generously inside, sear meat-side down until fragrant, then flip and steam-cook.
  3. In the juices remaining in the skillet, sauté shimeji mushrooms cut into 2 cm pieces, add the red wine, miso, ketchup, Worcestershire sauce, and water, reduce until thickened, and spoon over the stuffed peppers.
  • Point

An adaptation of stuffed bell peppers using burdock root. Finely chopped burdock root is added to the ground meat mixture and minced onion. The sauce features mushrooms for an autumn-like atmosphere, finished on a base of miso, Worcestershire sauce, ketchup, and red wine. You can make it easily without overthinking.

  • Pairing

The red wine-based sauce matches the berry and cherry flavors of the Zweigelt. The wine's fruitiness envelops the burdock flavor, creating a well-balanced pairing. The spicy notes of the ground meat and the bitterness of the bell pepper also share a strong affinity with the black pepper aroma and soft tannins, allowing you to enjoy a seamless pairing. It also works well with a bolder flavor by seasoning slightly heavier with pepper and salt. Feel free to adjust the seasoning to your liking.

Ethnic Spiced Beef and Chickpea Tomato Soup

・Ingredients (Serves 2–3)

  • Beef strips (or thinly sliced beef brisket/short plate): 150 g
  • Onion: 1/2 (coarsely chopped)
  • Carrot: 1/2 (cut in half lengthwise and thinly sliced)
  • Cooked chickpeas (canned): 100 g
  • Cilantro: 1–2 stalks (finely chop roots and stems, coarsely chop leaves)
  • Garlic (grated): 1 clove
  • Olive oil: 1 tbsp
  • Cumin powder: 1 tsp
  • Coriander powder: 1 tsp
  • Coarsely ground black pepper: A pinch
  • Canned tomatoes (cut or diced): 200 g (1/2 can)
  • Water: 400 ml
  • Granulated consommé: 1 tsp
  • Soy sauce: 1 tsp
  • Salt: Around 1/2 tsp (adjust to taste)

・Instructions

  1. Heat olive oil, garlic, chopped cilantro roots and stems, onion, and carrot in a pot over medium heat.
  2. Once the onion becomes translucent, reduce the heat to low, add the cumin powder and coriander powder, and sauté for about 30 seconds until fragrant.
  3. Return to medium heat, add the beef while separating the pieces, sauté briefly, and add the chickpeas.
  4. Add the canned tomatoes, water, and consommé; once boiling, skim off any scum, cover, and simmer over low heat for about 10–12 minutes until the carrots are tender.
  5. Season with soy sauce, salt, and coarsely ground black pepper.
  6. Ladle a generous helping of ingredients into bowls and top with a mound of fresh cilantro leaves.
  • Point

An ethnic-style adaptation of burdock root. Spices such as cumin, coriander, and coarsely ground black pepper, along with cilantro, give it an exotic flavor profile. Made on a tomato base using beef—which pairs wonderfully with burdock—and enhanced with chickpeas, it is deeply satisfying. The distinctive flavor of burdock comes together deliciously as one of the dish's unique characters.

  • Pairing

A refreshing pairing where the flavor of cilantro resonates with the herbal notes of Zweigelt. The spice, fruitiness, and acidity found in the wine blend in like seasonings for the soup, making the dish feel even more complex in flavor. The textures of the beef and burdock, along with the sweetness of the chickpeas, are also elements that elevate the affinity with the wine. Because a touch of the wine's acidity lingers in the finish, you can enjoy a clean, crisp aftertaste.

Summary

Burdock root is expected to offer various health and beauty benefits, starting with improving intestinal environment and relieving constipation.

It is a recommended ingredient not only for its delicious taste, but also for those who care about their health.

Enjoy an autumn of good appetite in a healthy way while putting wine and burdock pairings into practice.
