Starting April 1st, two novel wines will be newly released from Wakayama Yuasa Winery, operated by TOA Co., Ltd.
Consisting of a Chardonnay crafted using skin contact fermentation (kamoshi method) and a red wine paired with soy sauce-based dishes, they have reportedly been crafted into wines with flavors entirely different from anything before.
Here are the details.
About "Chardonnay Kamoshi"
One of the wines being newly released this time is "Chardonnay Kamoshi".
It is an exquisite wine brewed using red wine vinification methods with Chardonnay harvested in 2023 in Hokuto City, Yamanashi Prefecture, a renowned region for wine grapes.
A long, lingering finish in the mouth after sipping.
Elegant and complex, expressing the noble character of the wine.
It features a rich, refined aroma, with fruity notes and floral nuances harmonizing exquisitely.
Mellow acidity and a firm body.
The acidity elevates the flavor, making it a well-balanced wine.
About "SHOW YOU"
Another wine being newly released is "SHOW YOU".
This uses "Hokuto no Shizuku", a grape variety unique to Japan created by crossing Cabernet Sauvignon, the queen of red wine varieties, with the Japanese wild grape variety "Gyōja no Mizu".
The color is deep—turning purple if a single drop falls on white paper—allowing you to strongly experience the characteristics of wild grapes.
If you drink it imagining that "red wine = heavy flavor," you might perhaps feel it lacks something; however, the deliberate commitment to a firm acidity and soft astringency was driven by the desire to create a wine that pairs with soy sauce.
It is a unique red wine that can be enjoyed without compromising the delicate flavors of soy sauce or Japanese cuisine.
