Mottox Releases Wine Barrel-Aged Sake "HAREGI Kitsune" from Its "Craft Sake" Series!

The "Craft Sake" series is crafted by Mottox Inc. in collaboration with sake breweries to create sake loved around the world, just like wine.

The wine barrel-aged sake "HAREGI Kitsune" has been released from this series.

Here are the details.

The "HAREGI" Series

"HAREGI Kitsune" is the fourth release in the "HAREGI" series, which features wine barrel-aged sake within the "Craft Sake" lineup.

This product was brewed by Kinmon Akita Shuzo, a brewery that enjoys immense popularity both in Japan and abroad, having won awards at the International Wine Challenge for 12 consecutive years.

The label features a design reminiscent of wearing a kimono with a "kitsune" (fox) motif—a creature deeply connected to people and featured in local folklore since ancient times in Daisen, Akita Prefecture, where the brewery is located.

Characteristics of "HAREGI Kitsune"

"HAREGI Kitsune" is an undiluted sake (genshu) aged in wine barrels, crafted using Kinmon Akita Shuzo's signature method with three times the standard amount of koji to impart rich umami.

Furthermore, it uses "black koji," which is typically used in the production of awamori and shochu in Okinawa and southern Kyushu, giving it a pleasantly refreshing acidity reminiscent of plum wine (umeshu).

The deep, savory flavor packed with the umami of rice characteristic of Kinmon Akita Shuzo combines brilliantly with the subtle maturation notes from the wine barrels.

This is a sake that wine lovers should definitely check out.
