About “Wa Mauve – Wine Awayuki –”
“Wa Mauve – Wine Awayuki –” is a premium Japanese-style confection that uses grape skins that would otherwise be discarded during winemaking.
Made by upcycling grape skins remaining after wine pressing at NIKI HILLS WINERY in Niki, Hokkaido, the sweet first appeared at the winery during Golden Week in 2025.
Also Available on the 11th-Floor Event Space at Shinjuku Takashimaya
“Wa Mauve” is a project launched by CHANT to reduce food loss and support regional revitalization.
The project makes effective use of byproducts generated during the production of regional specialties, transforming them into ethical and delicious sweets with the aim of creating sustainable regional collaboration.
This first product uses grape skins left after pressing NIKI HILLS WINERY's white wine “HATSUYUKI,” upcycling them into guimauve, a traditional French marshmallow-like confection that melts softly like bubbles.
It offers a delicate adult-oriented sweet experience, with a new texture that gently dissolves in the mouth and can be enjoyed together with wine.
Limited sales will also take place on the 11th-floor event space at Shinjuku Takashimaya from May 15 to 21.
