The Jade Room + Garden Terrace, the signature restaurant of The Tokyo EDITION, Toranomon, will hold "Terroir Shiojiri" starting Thursday, November 14.
As the third installment of the "Terroir Japan" series, this project focuses on ingredients and wines from Shiojiri City, Nagano Prefecture.

About "Terroir Japan"
"Terroir Japan" is a project that celebrates the rich ingredients shaped by the changing seasons and diverse regional characteristics, as well as the richly expressive Japanese food culture, showcasing pairings of innovative dishes using local ingredients from across Japan with domestic wines.
Launched in the summer of 2023, the first installment of this series focused on Yoichi, Hokkaido, and the second, held in the spring of 2024, spotlighted Miyagi. For this third edition, the spotlight turns to the ingredients and wines of Shiojiri City, Nagano Prefecture.
About "Terroir Shiojiri"
In the upcoming "Terroir Shiojiri," as with previous editions, Partner Chef Tom Aikens, Chef de Cuisine Richard McLellan, and Head Sommelier Masakatsu Yatabe will discover the charms of the producing region and its producers through a fresh lens that merges Japan and the UK.
The course menu incorporates a wide variety of ingredients from Shiojiri—ranging from signature Shinshu brand produce to rare delicacies—discovered by Richard McLellan, who leads the kitchen at The Jade Room, during his visit to Shiojiri City. These include Takebuchi Farm Shinshu Premium Beef, Gitaro Shamo chicken, carp, Shinano yukimasu (whitefish), Matsumoto Ippon green onions, hardy kiwi (sarunashi), and pawpaw.
For the wine pairing, Head Sommelier Masakatsu Yatabe will select wines curated from various wineries, including Chateau Mercian, Domaine Kosei, Sun Sun Winery, and Inishe no Sato Winery, tailored to the dishes and guests' preferences.
