"Tarumaru", a sake fermented from rice together with orange wine pomace, is now available!

"Tarumaru" has been released by the sake brewery "haccoba -Craft Sake Brewery-".

It is a unique "sake" made by fermenting orange wine pomace together with rice and aging it in wine barrels. (Released over two consecutive weeks on January 12 and January 19)

Let's take a look at the details.

Sake Brewing That Recycles Wine Pomace

"Tarumaru" is a sake created in collaboration with "Fattoria AL FIORE", a winery in Kawasaki Town, Miyagi Prefecture.

They reportedly received orange wine pomace from the winery and brewed the sake by fermenting it together with rice.

Furthermore, this time the sake was aged in wine barrels.

Two experimental patterns have been prepared: a lightly aged version that retains freshness, and a deeply aged version.

About "Tarumaru"

The barrels used for "Tarumaru" were originally used for French red wine (Gamay).

Fattoria AL FIORE then reportedly used them for aging white wine (Chardonnay).

With the umami of rice as a base, combined with the flavors of various grapes, it has been finished into an enchanting taste with complexity.

Enjoying a Rare Sake

As introduced above, "Tarumaru" is available experimentally in two types with different aging periods: the "Lightly Aged ver." and the "Deeply Aged ver."

Sales will end as soon as supplies run out, so if you are interested, be sure to check it out as soon as possible.
