Tabayama Village in Yamanashi Prefecture has begun offering "Tabayama," a whisky aged in Tabayama Village Mizunara oak casks jointly developed with Sainte Neige Wine, as a Furusato Nozei tax-donation gift.
Following the release of Tabayama Wine, a new product has now emerged.
Here are the details.
About "Tabayama"
"Tabayama" is a whisky jointly developed by Tabayama Village, Yamanashi Prefecture, and Sainte Neige Wine.
It is a rare product aged in wooden casks made from village-grown Mizunara oak. Scotch whisky unblended spirit was aged in two Mizunara casks, and grain malt (blended) spirit in seven casks starting in March 2023, reaching completion in late June of this year.
The first lot produced 701 bottles of pure malt and 1,980 bottles of blended whisky, and sales began on July 11 at roadside stations and other locations within the village.
When 17 wooden casks were completed in 2021, "Tabayama Wine Chardonnay" was released in 2022 together with Okunota Winery (Ushiuoku, Enzan, Koshu City) as the first phase of developing an "All-Yamanashi Wine" made with barrels also from Yamanashi Prefecture.
Prompted by the release of Tabayama Wine, Sainte Neige Wine Co., Ltd. proposed a collaboration, leading to the development of wine and whisky.
In December 2023, a white wine aged in Mizunara oak casks was also completed.
