Swimmy Japan Co., Ltd. has begun sales of its fifth underwater-aged wine.
Only 100 sets of this rare wine are available.
Here are the details.
About the Underwater-Aged Wine Project
The Underwater-Aged Wine Project is a joint research project launched in 2018 by Swimmy Japan Co., Ltd. and Tokyo University of Marine Science and Technology, inspired by the hope of contributing to the revitalization of the company’s local Fukagawa area.
The project studies why wine recovered from sunken ships can taste better, and how it differs from wine aged on land.
This Year’s Underwater-Aged Wine
This year’s underwater-aged wine is a “Yamagata Delaware Sparkling.”
On December 26, 2022, the wine was submerged for the fifth aging experiment.
After about six months underwater, it was recovered on May 17, 2023.
The recovered wine is sold as a set together with the same wine aged on land.
The set allows drinkers to compare differences in flavor, color, aroma and overall taste between underwater aging and land-based aging.
