Here are the details.
About the "Shimane Fair"
The "Shimane Fair" is an event held at Haneda Excel Hotel Tokyu's Cafe & Dining "Flyer's Table".
This is a regular project where Chef Takimoto visits local areas and serves dishes featuring regional ingredients in course menus and pasta, with this edition focusing on Shimane Prefecture.
It is reported that dishes packed with the charms of Shimane Prefecture—a treasure trove of fine ingredients—using items such as "Shimane-grown Shine Muscat" and "Shimane Japanese Black Wagyu" will be offered.
Pairing Shimane Flavors with Shimane-Produced Wines
At this fair, dishes using Shimane ingredients will be served, including lunch and dinner courses, à la carte items, and desserts.
Guests can enjoy dishes featuring "Nodoguro (blackthroat seaperch) landed at Hamada Port", "Swordtip squid landed at Hamada Port" paired with "Okuizumo King Oyster Mushrooms", Gouda cheese from Kisuki Dairy, and more.
Furthermore, Shimane-produced wines will also be offered.
・Shimane Wine Enmusubi Chardonnay (Shimane Winery)
・Mori no Wine Red (Okuizumo Vineyard)
This is a precious opportunity to casually pair Shimane ingredients with wine in Tokyo.
