"Lake Shikotsu Tsuruga Resort Spa Mizu no Uta" is a facility that focuses on "gastronomy," which connects guests with the region's distinctive food, nature, history, and culture.
Under the theme of Lake Shikotsu 50-Mile Slow Food, they have created a new information-sharing-style restaurant that conveys the region's tradition and diversity through food, serving dishes that fully incorporate ingredients brimming with Hokkaido's charm.
With Lake Shikotsu 50-Mile Slow Food, dishes are presented in a casual course format that combines individual servings and platter dishes to bring out the natural umami of the ingredients, expressing both a casual vibe and a dynamism characteristic of Hokkaido.
The centerpiece bouillabaisse lavishly features Lake Shikotsu river shrimp, Funka Bay scallops, and seafood and vegetables harvested from nearby areas such as Tomakomai and Muroran.
