Kawashimaya Co., Ltd. has launched an initiative toward "value co-creation."
As the first step in this "value co-creation" initiative, they have developed "Wine Bread," which uses wine lees—a by-product that previously had to be discarded—as an ingredient.
Here are the details.
Project for "Upcycled Product Development"
In 1916 (Taisho 5), Kawashimaya Confectionery opened in Inage, Chiba City.
Continuing to walk hand in hand with the local community, Kawashimaya Co., Ltd. has reached the 108th anniversary of its founding.
Operating three businesses in baking, cooked rice, and dairy products, the company has continued to provide the value of "staple foods" that form the center of people's lives. In addition to delivering this traditional value, it has now launched an initiative toward "value co-creation" that balances regional character with sustainability.
They have started a project focused on "upcycled product development" in collaboration with local businesses.
"Wine Bread" Made with Wine Lees from "Sawa Wines"
This time, the first initiative of this "value co-creation" is "Wine Bread," which uses wine lees—a by-product that had no choice but to be discarded—as a raw material.
The wine lees were reportedly supplied by "Sawa Wines," operated by Yamamoto Farm Co., Ltd.
Using grapes grown in Yachimata City, this item effectively utilizes waste produced from the winemaking process.
According to the company, the wine bread brings two key social values: Eco, which addresses upcycling through waste reduction and utilization of unused resources; and Regional Revitalization, through the birth of a specialty product with a narrative unique to this region.
The bread is finished so that after the sweetness and acidity of raisins and currants, one can enjoy the flavor and complex character of Sawa Wines, making it a must-try for wine lovers.
