Born at Minamisanriku Winery! What is "Wine Pomace Wakame Sheep", Raised on "Wine Pomace" Feed!?

Unique news has arrived from Minamisanriku Winery.

It is the "Wine Pomace Wakame Sheep", raised on feed containing Minamisanriku wakame seaweed and "wine pomace"—the grape skins and seeds produced during the winemaking process at Minamisanriku Winery.

According to the winery, a presentation wine party for the "Wine Pomace Wakame Sheep" will be held at Minamisanriku Winery's Shop & Kitchen on Saturday, May 28, 2022.

Here are the details.

A New "Wakame Sheep" Meat

The "Wine Pomace Wakame Sheep" will be served at this wine party.

In addition to wakame seaweed, this new "Wakame Sheep" meat comes from sheep raised on feed made by mixing "wine pomace"—the grape residue produced during the winemaking process at Minamisanriku Winery—with fermented wakame feed and fermenting it further.

To begin with, feeding wakame-infused feed to sheep increases inosinic acid, one of the three major umami components, by about six times.

Furthermore, analytical results (commissioned to Taste & Aroma Strategic Research Institute Co., Ltd.) show that oleic acid also increases by about 20%, demonstrating significant nutritional benefits from simply adding wakame to the feed.

In addition, "wine pomace" is said to contain components such as polyphenols, resveratrol, tannins, anthocyanins, and oleanolic acid.

Going forward, they plan to verify the effects of feed enriched with wine pomace together with Satoumi Farm.

Full-Course Dinner Featuring Seasonal Ingredients from Minamisanriku

At the "Wine Pomace Wakame Sheep" presentation wine party, a full-course dinner featuring seasonal Minamisanriku ingredients, centered around "Wine Pomace Wakame Sheep" meat, will be served alongside wines crafted at Minamisanriku Winery.

During the wine party, Mr. Katsuya Kaneto, Representative Director of Satoumi Farm, is scheduled to introduce Satoumi Farm and the "Wine Pomace Wakame Sheep."

In addition, prior to the wine party, a tour of Satoumi Farm's sheep ranch is planned for interested participants.
