On April 30, 2024, "OTTO SETTE", the main dining room of "Hoshino Resorts RISONARE Yatsugatake", fully reopened after a complete renovation.
It has reportedly been reborn into a space inspired by a wine cave.

About the Renovation of "OTTO SETTE"
"OTTO SETTE" has undergone a renewal and grand reopening.
Returning to its original concept cherished since its opening—"to provide encounters with ingredients unique to this region"—and incorporating the desire to focus even more thoroughly on "wine (Vino) and vegetables (Verdura)", it has reopened under the new concept "Vino e Verdura", which means "wine and vegetables" in Italian.
With the hope that guests will savor the pairing of wine and vegetables to their heart's content while feeling the terroir of Yatsugatake, the spatial design has been completely refreshed to reflect a wine cave for aging and storing wine.
Furthermore, featuring sofas inspired by wine barrels and made with the same oak wood, along with a wine cellar measuring approximately 11 meters in total length, the space has evolved so guests can fully experience the story leading up to the creation of wine.
Pairings of Cuisine Dedicated to Vegetables and Wine
The cuisine has been renewed to incorporate carefully selected vegetables into everything from appetizers to desserts.
From an antipasto designed with a wine motif representing grape leaves and served on cork tableware, to a dish portraying the Yatsugatake "vegetable garden" that has been served continuously since its opening, course meals featuring meticulously selected vegetables from appetizers to desserts are offered.
In addition, sommeliers select from approximately 500 varieties and 2,000 bottles of Yamanashi and Italian wines.
For example, watercress Genovese linguine is paired with "Chateau Jun Sauvignon Blanc 2021", showing a dedicated focus on Japanese wine as well.
