From March 21 through June 25, 2025, OTTO SETTE, the main dining restaurant at RISONARE Yatsugatake, will offer a spring-only dinner course featuring seasonal Yatsugatake flavors such as watercress and nanohana greens.
From a cellar of around 500 labels and 2,000 bottles, sommeliers will propose pairings for each dish, allowing guests to enjoy the marriage of wine and vegetables.

OTTO SETTE is RISONARE Yatsugatake's main dining restaurant, with a focus on “wine and vegetables” and encounters with ingredients unique to the region.
The spring-only dinner course is scheduled to include dishes such as Ayameyuki turnip and venison cotoletta, watercress genovese with linguine, and nanohana and strawberry gelato.
Enjoying wine and vegetable pairings
One of OTTO SETTE's attractions is the pairing experience proposed by sommeliers with an intimate knowledge of the local wines.
With around 500 kinds and 2,000 bottles of wine from Yamanashi Prefecture and Italy, OTTO SETTE's sommeliers recommend wines to match each dish.
Among them, wines from partner winery Domaine Mie Ikeno are especially worth trying during a visit.
Made only from estate-grown grapes and vinified in a way that works with rather than against nature, the wines offer flavors that seem to capture the natural character of Yatsugatake.
