From Monday, August 4 through Friday, October 10, 2025, Chinese restaurant Star Hill at The Capitol Hotel Tokyu will hold an “Otaru Ingredients Fair.”
For weekday dinners only, a menu pairing dishes with wines from OSA WINERY will also be available.

The “Otaru Ingredients Fair”
The fair is part of a culinary-travel series in which chefs personally visit regions across Japan, encounter local environments and producers’ ideas, and express the inspiration they gain through course menus.
This edition focuses on Otaru, Hokkaido, a city rich in tourism and history. The chefs visited the Shiribeshi region of southwestern Hokkaido, which includes Yoichi and Niki, listened to producers, and drew inspiration from the clear air, rich natural surroundings and local ways of life. Those impressions are expressed dish by dish in the menu.
OSA WINERY Wines Too
The course makes generous use of Shiribeshi ingredients rarely distributed outside Hokkaido, including Otaru Jidori chicken raised in a natural environment where the birds can move freely, Kitajima Wine Pork raised on feed incorporating Yoichi wine, top-grade Otaru Maehama herring roe known as “yellow diamonds,” seasonal herring, daikon and melon.
A wine-pairing set featuring OSA WINERY, an Otaru winery run by a husband-and-wife team, will also be available.
