KAI Matsumoto Reopens After Full Renovation, Evolving into Italian Cuisine Centered on Shinshu Wine!

On August 4, 2026, Hoshino Resorts’ hot-spring ryokan KAI Matsumoto will reopen after a full-property renovation.

Reservations open in advance on April 22, 2026.

About the Renovation

The renewed KAI Matsumoto uses its contemporary architecture, whose sculptural beauty evokes a music hall, as a setting for stays that combine Matsumoto’s culture as a “city of music” with the enjoyment of Shinshu wine.

Most symbolic is the evolution toward Italian cuisine with local Shinshu wine as the star.

In pursuit of a dining experience suited to wines grown in Shinshu’s cool climate, the ryokan chose to step beyond the traditional Japanese and kaiseki cuisine associated with ryokan and adopt Italian cuisine for the first time within the KAI brand.

Together with a variety of bathing experiences created by eight types of baths in 13 configurations plus a sauna, architecture, music, and wine come together to create a distinctly “Matsumoto elegante” stay.

For Japanese wine fans, a key feature of the renewal is the dining concept: “hot-spring ryokan × Italian cuisine,” designed to explore Shinshu wine in depth.

Dinner will feature an authentic Italian course created to pursue pairings with local Shinshu wines.

Shinshu wine is characterized by clear flavors and fresh fruit. To preserve its light finish, the cuisine avoids layering heavy sauces and instead uses the freshness of olive oil to connect the dishes and create the dining experience.

The first course, stuzzichini, will be served in custom tableware inspired by a piano.

In Italian, “elegante” is also used as a musical expression, and the piano-inspired opening stuzzichini is designed as a dish that symbolizes the concept.
