Toast with beer before wine.
Among wine lovers, there are surely many who also love beer.
A perfect bottle has arrived for such people.
"METAMORHOP BRUT IPA," biotransformed with wine yeast, has been released in limited quantities by "ISEKADO."
Here are the details.
About "METAMORHOP BRUT IPA"
"METAMORHOP BRUT IPA" is created by "ISEKADO" in Ise City, Mie Prefecture, a brewery that continues to pursue authentic beer under the slogan "A cheer for your life!"
It is described as having an ultra-crisp dry finish and a thrilling flavor representing the "ultimate in tropical."
What is "Biotransformation"?
The defining characteristic of "METAMORHOP BRUT IPA" is that it has undergone biotransformation using wine yeast.
Biotransformation is said to refer to the synthesis of chemical compounds and the production of useful substances using biocatalysts (yeast).
In this beer, the biotransformation capability of the IRC7-active wine yeast "Sauvy" is utilized to cleave the cysteine-bound 3MH (3-mercaptohexanol) present in the beer into its free form.
As a result, bound thiols that are naturally odorless are converted into 3MH, which carries aromas of grapefruit, guava, and lychee.
Furthermore, it is designed so that this is esterified and converted into 3MHA (3-mercaptohexyl acetate), which has aromas reminiscent of passion fruit, and released into the beer.
While somewhat technical, it is said to generate an amount of thiols (3MH, 3MHA) far exceeding the sensory threshold, resulting in a very, very juicy aroma.
It is a beer likely to appeal particularly to Sauvignon Blanc enthusiasts, so be sure to check it out.
