As one of its SDGs initiatives for fiscal 2025, Ise-Shima Resort Management Co., Ltd. is taking on a resource-circulation project based on a “circular food chain.”
The company has begun an initiative aimed at producing wine using food residue such as spiny lobster shells.

The Challenge of Growing Grapes
Ise-Shima Resort Management has been pursuing full-scale SDGs initiatives since 2019 through a range of activities.
As part of those efforts, since 2020 the company has worked with Ise Utsushikuni Brewery / Ise-Shima Winery in Ise to compost food residue generated by dishes served at its facilities, including spiny lobster and abalone representing the rich marine resources of the ancient Miketsukuni region. The compost is reused as fertilizer for grape cultivation.
As a new initiative for fiscal 2025, the company has begun growing grapes on the grounds of Shiojitei at Toba International Hotel as part of this circular system.
The company hopes to serve wine produced through this cycle in the near future.
Key Points of the Vineyard
The composted fertilizer contains minerals and calcium and is considered well suited to enriching the soil.
The bamboo used for the grape trellis is reclaimed from unmanaged bamboo groves.
Unmanaged bamboo can crowd surrounding trees and negatively affect biodiversity, landscapes, and the natural environment.
What kind of grapes will grow and eventually be harvested?
