PukuPuku Brewing and Coco Farm & Winery Collaborate to Release Doburoku!

PukuPuku Brewing has released "Hopped Wine DOBUROKU," a "hop wine doburoku" created by fermenting Muscat Bailey A pomace from Coco Farm & Winery and beer hops together with rice.

Here are the details.

About PukuPuku Brewing

PukuPuku Brewing is a phantom brewery (a brewery without its own physical facility) founded in July 2022 in Odaka Ward, Minamisoma City.

Based on the concept of "sake that dissolves the boundaries with different cultures," it is a highly unique brewery that crafts sake and other beverages by combining craft beer techniques.

This time, the brewery produced a doburoku fermented from rice alongside red wine grape pomace from "Coco Farm & Winery," which has been producing beautiful wines for over 40 years in Ashikaga City, Tochigi Prefecture.

The resulting doburoku is said to feature a peach-like aroma alongside a multi-layered depth, starting with wine, amidst a vivid acidity.

About the Product

PukuPuku Brewing often crafts its beverages inspired by craft beer styles.

This time, as a collaboration with "Coco Farm & Winery," which has been brewing beautiful wines in Tochigi Prefecture for over 40 years, it utilizes red wine pomace (marcs).

By fermenting the wine pomace once again together with rice, they took on the challenge of expressing depth and aromas that cannot be achieved with rice alone.

Under the theme of "a resonance of doburoku and wine's umami, acidity, and aroma without relying on sweetness," the idea was to harness the deep umami and astringency of wine—which achieves an exquisite balance without being sweet—into the doburoku.

A refreshing fruity aroma spreads first, followed on the palate by a vivid, sharp acidity with a slight effervescence, leading into a lingering finish of doburoku umami and deep red wine richness, making it a doburoku delicious even in summer.

Japanese wine fans should definitely check it out.
