A new wine has arrived from "f winery", an urban micro-winery operated by Felissimo.
Remarkably, it is a wine brewed using Niagara grapes grown in Yoichi Town, Hokkaido, by Akinori Kimura, famous for growing the "Miracle Apples", through the Kimura method of natural cultivation.

Akinori Kimura is the person who created a massive sensation by growing the "Miracle Apples".
His farming method of cultivating through "natural cultivation"—completely free of pesticides and fertilizers, using no "fertilizers, pesticides, or herbicides"—is known as the "Kimura method of natural cultivation", and it is reportedly continuing to expand to rice, vegetables, and now grapes.
The Niagara grapes that gave birth to this newly released wine are also fruit truly worthy of being called "miracle grapes".

The Niagara grapes used as the raw material this time were grown at the "Hokkaido Akinori Kimura Natural Cultivation Farming School".
Without using fertilizers, pesticides, herbicides, or similar inputs, they were cultivated by maximizing the "inherent power of nature", "activation of soil microorganisms", "symbiosis of living organisms", and the accompanying balance of the natural world.
The urban micro-winery "f winery" received these Niagara grapes from Mr. Kimura in the autumn of 2021, and produced 500 bottles of wine after the turn of the year.
The wine has been named "f winery001 Kimura-style Niagara".
With its clean aroma, sweetness, and acidity, it is said to have a finish reminiscent of ginjo sake.
It also pairs exceptionally well with Japanese cuisine such as sashimi and sushi, making it a miracle wine that every Japanese wine fan should try at least once.
