"Ebichirya Aunen Rosé Awa" is now on sale from "Unique Encounters with Alcohol: Sakehinata."
Produced by Yamato Wine, it is a new Japanese wine that fuses traditional winemaking methods with Sakehinata's playful spirit.
Here are the details.
"Sparkling Rosé" and Chili Shrimp
When considering an alcoholic drink to pair with chili shrimp—a Chinese cuisine staple known for its plump texture and spicy-savory flavor—Sakehinata's answer was "chilled sparkling rosé."
"Ebichirya Aunen Rosé Awa" has been crafted as a Japanese wine that pairs with chili shrimp: gentle fruitiness softens the spiciness while bringing out the savory umami of the shrimp, and the lively bubbles cleanly wash away the oil from the batter.
About the Wine
"Ebichirya Aunen Rosé Awa" is a rosé wine made using 90% Japanese Delaware and 10% Bailey Alicante A / Black Queen grapes.
The producer is Yamato Wine, founded in 1913 (Taisho 2). While it features light, gentle fruit flavors, it also has a solid structure, making it an easy-drinking yet satisfying wine.
Its color is an orange-tinted pink.
The aroma offers the distinct scent of fresh table Delaware grapes complemented by notes of Japanese citrus like Iyokan, creating an appetizing and inviting bouquet.
A key highlight is its refreshing, somewhat dry taste despite the presence of gentle fruitiness.
It is a bottle that promises to pair exceptionally well not only with chili shrimp, but with sweet chili-based dishes in general.
Be sure to check it out.
