"haccoba -Craft Sake Brewery-" has introduced "beeno buono," an alcoholic beverage fermented with herbs during the wine production process.
Co-developed with Fattoria AL FIORE, a winery in Kawasaki Town, Miyagi Prefecture, this beverage was produced jointly from grape harvesting through to manufacturing.
Here are the details.
About "beeno buono"
"beeno buono" is a beverage released by "haccoba -Craft Sake Brewery-," a sake brewery established in February 2021 by haccoba Inc.
It is a special bottle co-developed with Fattoria AL FIORE, a winery in Kawasaki Town, Miyagi Prefecture, working together from grape harvesting to production.
This time, instead of sake, they brewed a beverage by adding the herb butterfly pea during the fermentation process of "wine."
Butterfly pea is a legume native to tropical regions that features a vivid blue color. When made into herbal tea or similar infusions, its vivid blue color is very distinctive.
The vivid blue derived from the butterfly pea melts into the wine, reportedly resulting in an enchanting, mysterious blue-purple beverage.
The Taste of "beeno buono"
"beeno buono" is a bottle recommended as a table drink, featuring pleasant effervescence from secondary fermentation in the bottle alongside refreshing grape acidity.
It is said to have a complex flavor profile finished with a honey-like sweet aroma, pleasant acidity and effervescence, followed by lingering brett notes on the finish.
