A Household Nukadoko Formulated with "Wine Pomace" Appears! What Is "BENINUKA"?

Yamafuji Co., Ltd. has launched sales of the household nukadoko (fermented rice bran bed) "BENINUKA."

It is an innovative product that allows you to make nukazuke pickles formulated with "wine pomace"—the grape skins and seeds that are often discarded during the winemaking process and processed into powder.

Let us share the details with you.

Discarded Grape Skins and Seeds After Pressing

In recent years, authentic craft wineries have been increasing across the country, and Japanese wine is gaining growing acclaim worldwide.

Among these areas, Yamanashi Prefecture can be called a pioneering presence.

In Yamanashi Prefecture, which leads Japanese wine, momentum toward contributing to the SDGs is also growing, and one example is "wine pomace."

Wine pomace refers to grape skins, seeds, and stems left over after grapes are pressed during the winemaking process; while some of this wine pomace is utilized as livestock feed, the majority is discarded.

Surprisingly, that amount reportedly reaches nearly 10,000 tons per year...

For this reason, the need for effective utilization has been pointed out from the perspective of pursuing a sustainable society.

Under such circumstances, Yamafuji, headquartered in Kofu City, turned its attention to wine pomace.

With "making nukazuke" having become popular during stay-at-home time amid the COVID-19 pandemic, the company planned and produced "BENINUKA" under the supervision of a "Fermented Food & Health Advisor" as a product that people who started keeping a nukadoko can continue to use.

About "BENINUKA"

The "nuka" (bran) of "BENINUKA" blends wine pomace along with rice bran, dried daikon radish, mandarin orange peel, and more.

Just by adding water, you can easily complete your nukadoko.

Furthermore, not only classic choices like daikon radish, turnip, cucumber, and carrot, but also tomatoes, avocados, and zucchini pair wonderfully when pickled in it.

In addition, drained tofu, processed cheese, and peeled hard-boiled eggs can also be finished deliciously.

This new type of nukazuke, tinted a faint pink by the polyphenols in wine pomace, is sure to be exciting just to look at.

Cheers with Wine Pomace Nukazuke and Yamanashi Wine!

Because wine pomace contains abundant polyphenols and other nutrients, it also exerts anti-aging benefits.

By pickling and eating plenty of vegetables, you can fulfill both health and beauty goals.

This is a new product that lets you create a new sensation of local nukazuke tied to wine.

Why not enjoy pairing Yamanashi wine with nukazuke pickled in "BENINUKA"?
