Auberge French Forest on Awaji Island, Hyogo, will offer its “Awaji Island Three-Year Torafugu and Japanese Wine Pairing” for a limited period from Saturday, February 1 through Friday, February 28.

The pairing is offered at Auberge French Forest, a destination restaurant set amid the quiet landscape of Awaji Island.

The program features Awaji Island three-year torafugu, a branded pufferfish raised for three full years—one year longer than usual—to develop exceptional umami and firm, springy flesh, paired with Japanese wines selected from across the country.

The course presents pufferfish, an ingredient closely associated with Japanese cuisine, through French techniques designed to bring out its natural flavor. Dishes include a Western-style pufferfish roulade scented with chrysanthemum greens, inspired by fugu tessa sashimi, and pufferfish baked in pastry with black truffle, combining delicate, juicy fish with the aroma of truffle.

The restaurant has prepared a special selection of Japanese wines to complement the pufferfish.
