About the First Products of "A PIECE OF MINAMISANRIKU"
Here is an introduction to the first products launched by "A PIECE OF MINAMISANRIKU."
Coho Salmon Confit

This product uses "Miyagi Salmon," the top-grade brand among the farmed coho salmon produced in Miyagi Prefecture, which accounts for 90% of domestic production.
Among "Miyagi Salmon," producers carefully handpick the fattiest 3 to 4 kg coho salmon on board the ship and bleed them using the ikejime technique. By marinating them in oil and cooking them slowly at low temperatures, this confit is finished with a melt-in-your-mouth texture packed with the savory umami of coho salmon.

Oyster Butter Pâté

This product uses "Minamisanriku Togurakko Oysters," which were the first in Japan to acquire ASC farm certification. Among these, it generously features oysters harvested during the season when they are at their plumpest and have the richest, creamiest flavor.
After meticulous preparation, they are slowly simmered with Minamisanriku Winery white wine and aromatic vegetables, further concentrating the umami of the oysters.
By lavishly combining them with special butter made from fresh raw milk from the foothills of Mount Zao in Miyagi Prefecture, it is finished as a rich oyster butter pâté.
