What we make is farmers’ wine.
Kunitsu Fruit Wine Brewery Co., Ltd. was established in March 2018 with support from the Nabari Chamber of Commerce and many people in Nabari City, Mie Prefecture.
With cooperation from Nabari City, the winery renovated and now uses a former elementary school as its production facility.
Winemaking begins with pruning the grapevines from winter through early spring.\n\nGrowers work alongside the vines through the long season, overcoming many challenges together as the grapes make their way toward becoming wine.\n\nIn the cellar, we carefully assess their condition and do everything we can to help the grapes become the wine envisioned by the growers who raised them.\n\nFor this reason, our winemaking is guided by a firm belief: “80% grapes, 20% people.”
Our winemaking places the highest priority on expressing the grapes as fully as possible, with intervention in the cellar kept to a minimum.\n\nAccordingly, even if the resulting alcohol level is low, we do not add sugar or acid. Fermentation is carried out with wild yeast.\n\nWe also aim to make pure, unadorned wines that as many people as possible can enjoy with ease, focusing on a smooth texture and a clean, almost water-like drinkability in the best sense.
