224WINERY’s flagship wine is “Shima-Chan,” which it has continued to produce since its contract-winemaking days.
It is a traditional-method sparkling wine made from Delaware and Chardonnay grapes, with secondary fermentation in the bottle.
Wines made from estate-grown grapes nurtured by the sea breeze and abundant sunshine of the Seto Inland Sea are called the “Shima (Island) Series,” a core range produced every year.
Because wine is a beverage of personal preference, the winemaker wants customers to be able to choose from a variety of styles to suit their tastes. Another range, the “Shodoshima Brewing Series,” uses grapes sourced from around Japan to create one-of-a-kind wines that reflect each encounter.
The winery also takes advantage of the fact that fruit wine can be made from fruits other than grapes, experimenting with Shodoshima specialties such as mandarins and strawberries.
