On February 20, 2023, Yamanashi Wineries Fair 2023 was held at Hyatt Regency Tokyo.
"Yamanashi Wine Pairing Seminar" by Mr. Shinya Tasaki
In the morning, the "Yamanashi Wine Pairing Seminar" by Mr. Shinya Tasaki was held as a SPECIAL EVENT.
Led by Mr. Shinya Tasaki, who currently serves as Vice Governor of Yamanashi Prefecture and President of the Japan Sommelier Association, the panel of instructors comprised four of Japan's top sommeliers.
It was a luxurious seminar by them exploring pairings between Yamanashi wines and Yamanashi ingredients.

Here are the four sommeliers:
Mr. Takemi Gomi of Bistro Mille Printemps and Mr. Hiroaki Watanabe of Highland Resort Hotel & Spa, both active in Yamanashi Prefecture, along with Mr. Takashi Ishiguro of L'Osier in Ginza and Ms. Miyuki Morimoto of Conrad Tokyo, both active in Tokyo.
The seminar began with listening to tasting comments on the wines, followed by proposals for dishes using Yamanashi ingredients to pair with them.
There were five types of wine: two Koshu, one Chardonnay, Muscat Bailey A, and a Merlot-based Bordeaux blend.
Regarding ingredients, Yamanashi specialties such as Fujinosuke (a cross between king salmon and trout), watercress, Hoto noodles, and Shingen chicken were introduced.
In addition to the characteristics of these ingredients, preparation methods and variations of accompanying sauces were also explained, which must have been a great learning experience for the participating restaurant professionals in proposing pairings.

Yamanashi Wine Tasting and Business Meeting
18 wineries participated this time.
Each winery set up a booth, and many people from the liquor retail, restaurant, and media industries gathered for this wonderful opportunity to taste several carefully selected wines along with detailed explanations, enthusiastically tasting each one.
