Music-Vibration-Aged Red Wine: Inoue Winery’s “Toki no So” Released in Limited Quantity January 27

Inoue Winery in Konan, Kochi Prefecture, has developed the music-vibration-aged wine “Toki no So” together with audio equipment maker Onkyo Corporation and catalog retailer Light Up Shopping Club Inc.

The wine will be released in limited quantities from January 27, 2025.

About Music-Vibration Aging

The limited-release “Toki no So” is a unique wine matured using music vibrations.

Onkyo Corporation has researched with Tokyo University of Agriculture how exposing alcoholic beverages to musical vibrations during maturation affects yeast.

Academic research has shown that music vibrations can influence the finished beverage, and the technology has been incorporated into Toki no So.

During barrel aging at Inoue Winery, the wine was matured while being exposed to a performance of Mozart’s Flute Concerto No. 1 by the Kochi Symphony Orchestra.

About “Toki no So”

Toki no So is a red wine made from Tannat grapes grown in summer 2023 in Yamanami, Konan, Kochi, and vinified at Inoue Winery’s Ichi Winery.

It has a deep ruby color and vibrant aromas of black fruits such as cassis, plum, and blackberry. The tannins are moderately silky, producing a balanced wine that gives the impression of having already undergone several years of maturation.

It is a substantial medium-bodied wine that pairs especially well with meat dishes.

It can be enjoyed now, but further aging should add greater complexity.
