In late March, Mottox Inc. released "Harada Seiryu Smooth & Light Junmai Ginjo".
This sake is part of the "Craft Sake" series, crafted by Mottox in collaboration with breweries to be loved worldwide just like wine.
Let us take a closer look at what kind of sake it is.
About "Craft Sake"
"Craft Sake" is a lineup of high-quality, distinctive sake jointly developed by Mottox and leading breweries across Japan.
Leveraging the expertise and rich international perspective cultivated in the wine business, the company conducted extensive research with distinguished breweries nationwide to develop high-quality, distinctive sake that complements Japanese cuisine.
About "Harada Seiryu Smooth & Light Junmai Ginjo"
"Harada Seiryu Smooth & Light Junmai Ginjo" is the newest addition to "Craft Sake", which has produced a wide variety of offerings to date.
Jointly developed with Hatsumomidi, a brewery rooted in its local terroir in Tottori Prefecture, this product follows "Harada Gengetsu", which was also jointly developed with the same brewery.
This time, focusing on a smooth and light profile, they lowered the alcohol content to 13%—roughly the same level as wine—aiming for a sake in which one can even perceive the umami of the "brewing water", an essential component of sake.
Using the same ingredients and yeast as "Harada Gengetsu" (koji rice: Yamada Nishiki from Yamaguchi Prefecture; kakemai: Saito no Shizuku from Yamaguchi Prefecture), it is said to achieve a light finish that expresses the excellence of the brewing water drawn from Kano—a renowned water source area in northern Shunan City—while maintaining a plump fruitiness.
It is an enticing sake that Japanese wine fans are sure to enjoy as well.
Enjoy Its Delicate Flavor!
"Harada Seiryu Smooth & Light Junmai Ginjo" features gently expanding, fresh fruity flavors with a lingering finish, leading to a refreshing aftertaste reminiscent of tasting fresh, clear water from a mountain stream.
It pairs wonderfully with prosciutto salads and carpaccio, and is also recommended for outdoor barbecues.
Why not try this bottle, characterized by its light, easy-drinking profile with alcohol kept down to the level of wine?
